Boondhi Masala
Boondhi — tiny pearls of flour, fried until they pop in your mouth — is one of those snacks that South India does better than anyone admits.
We toss ours in a masala that's distinctly South Indian: curry leaves, chilli powder, a whisper of asafoetida (hing). Each pearl is crispy, each handful is more-ish, and the masala coating makes this a boondhi that stands on its own — no mixtures, no fillers.
